有色稻花青素积累调控研究进展

Abstract: Colored rice is rich in protein, amino acids, cellulose, and essential minerals for the human body. It also contains active substances such as anthocyanins, which have anti-aging, cancer prevention, and antiviral effects, making it widely valued by consumers. This review focuses on summarizing the nutritional and health value of colored rice, and summarizes the accumulation, biosynthesis, and regulation processes of anthocyanins in colored rice from the perspectives of physiological and molecular regulation, as well as the effects of cultivation conditions such as temperature, light, water, and fertilizer level on the accumulation of anthocyanins. Finally, future research directions for colored rice are discussed.

摘要: 有色稻富含蛋白质、氨基酸、纤维素及人体必需的矿物质,同时含有花青素等活性物质,具有抗衰老、预防癌症和抗病毒的功效,广受消费者喜爱。本文重点总结了有色稻营养和保健价值,从生理和分子角度综述了有色稻花青素的生物合成和积累调控过程以及温光水肥等栽培条件对花青素积累的影响。最后,对有色稻未来的研究方向进行了讨论。
